TexMex Casserole/one pan meal #keto

If you've been around here for very long you know two things about me, well, more than that but when it comes to food you know...I love Mexican and Chinese food. Gosh dang it! I love both and unless I'm not in mood for one, I have a hard time deciding between the two.
Going keto has been difficult in this respect, because neither one of those International flavors is really keto friendly. I mean you have tamales, tacos, burritos, fried rice, dumplings, lo mein, chow mein, sweet and sour chicken...I could go on but I'll stop. If I don't stop I'll need a towel to wipe up my drool.
So anywho...I love both types of food and I thought to myself, Self-there has GOT to be a way to enjoy my favorite foods without going carb crazy.
This recipe is kind of like a taco salad, taco or the inside of a burrito, just without the tortillas.
AND it's all prepared in one dish, which AGAIN you know I love.

The larger photo is the final product going into the oven. Top right, some of the ingredients. Middle right my homemade taco seasoning, bottom right peppers and onions going into the seasoned cooked meat, middle bottom tomatoes added, bottom left adding the Mexican creama. Yes you see beans on the side, those were for D.

TexMex Casserole
1/2-1 lb ground beef
homemade taco seasoning (2 TBSP) recipe HERE (second recipe on this page)scroll down
4 small sweet salad peppers, diced
1 small sweet onion, diced (I used Vidala)
1 can diced tomatoes with jalapenos (or just diced tomatoes or a can of Rotel)
3/4 cup Mexican creama (or sour cream)
1 cup shredded Mexican blend cheese
(1 can refriend beans with raw onion on top were for D you can omit this as it is not part of the recipe)
Brown the beef in a cast iron or oven proof skillet with the taco seasoning. Once it is done add the diced peppers and onions. Stir well and allow to cook for a few minutes. Next add the can of tomatoes and stir well. Allow to heat through. Now  add your creama and stir, top with cheese. Bake at 350 degrees for 15-20 minutes so everything is nice and hot and the cheese is melted.
Enjoy with a nice side salad.

This is the monthly post/contribution to the group #BlogWithFriends. We had chosen good fortune as our theme but with all the tradgy in the world lately we felt it was insensitive to use that theme.
However, there is good fortune in all that we've seen. Those who survived, those who changed their minds about the concert, the families whose homes did not perish in the fires, the hurricane going out into the ocean instead of impacting the East coast like we had prepared for. Good fortune was everywhere. 
There was also sadness, horror, evil, death and destruction. None of us could have known or seen what was coming. No way to prepare. Now those directly affected have to mourn, rebuild and figure out life in a different way.
For myself life rebooted, a second chance, good fortune and yes lots of reflection, our new theme.
Taking time to reflect is always a good idea. Time to reflect, ponder, reevaluate and maybe change direction.
I have done this in many areas of my life, one being how I eat. So with that, here is a recipe that I hope you enjoy.

Brussel Sprout Stir Fry with Spicy Nut/Seed Mix
1/2 lb fresh brussel sprouts, thinly sliced
3 - 4 TBSP olive oil
salt
pepper
paprika
cumin
chili powder
RAW nuts
hazel nuts
walnuts
almonds
maccadamia nuts
raw or salted and roasted sunflower seeds
Thinly slice the brussel sprouts and toss in a pan with olive oil, salt and pepper. As they cook, chop your nuts and mix with the seeds and other spices. Just before the sprouts are done, add the nuts and continue to cook, be careful not to burn the nuts or brown too quickly as they will taste bitter.
It only took about 5-10 minutes to cook.

Creamy Pesto Chicken Bake #keto

Oh My Goodness! Talk about a fabulous recipe. What do we love? That's right, one pot meals, where here is another delicious meal that is cooked in one pot. Easy clean up, easy prep and just look at it!
I adored this meal, protein, cheese, veggies, one pot cooking, simple delicious ingredients. D however was not thrilled with it. He liked it but didn't love it. We have different taste. He is not overly fond of cheese, I KNOW, I heard you gasp! HOW can you NOT love cheese??? Well, he doesn't. He's okay with it and honestly I didn't use half of what I wanted too. Either way, it was delicious and I enjoyed it for several days afterwards. That's right, leftovers baby! That's like free lunch. What could be better? Well, I can think of a few things, but let's not stray from the subject at hand. Food, keto food to be exact.

Creamy Pesto Chicken Bake
2 large chicken breast (cut off the bone and chopped, it's what I had)
2 TBSP extra virgin olive oil (the good kind don't use cheap nasty stuff)
3 TBSP butter, unsalted
Salt , pepper and paprika - 1 tsp each
4 green onions diced, tops and bottoms
1/2 pint grape tomatoes
1 cup heavy whipping cream
1 lemon juiced
2 TBSP pesto (you could use 3 and it not be overwhelming)
12 oz cauliflower florets (I used frozen, thawed and drained well)
7 oz Swiss Gruyere cheese, shredded
I used a cast iron skillet. Place the oil and butter, toss in the chicken and spices. Once this is done, in a small bowl or mixing cup, add your cream, lemon juice and pesto, stir well and add to the chicken along with the tomatoes and green onions. Stir well, Top with the cauliflower florets. Top with the cheese.
Slid into a preheated oven at 400 degrees for 30-45 minutes, depending on your oven. Remove and allow to cool slightly.
Serve! That's it. Simple and delicious. One pot, easy clean up. The best kind of meal if you ask me.

Keto Lemon Caper Slow-Cooker Chicken

My boys will tell you that I am famous, well in their minds, for my throw together dinners. That means, I have no idea what we are having or what I'm doing until I walk into the kitchen. Yep, that's right. I wing it.
I go through the pantry, the fridge, the freezer and say to myself..."self, what are we going to eat tonight?" and most times I answer, yes answer myself and say "I have no freakin' idea" LOL
Then I grab a few items and throw them together. Literally, toss them in a slow cooker or in a pan on the stove. Anywhere from 15-45 minutes later we have dinner or it may be hours later if I tossed it in the slow cooker but you get the idea.
These tend to be my best recipes. The creative juices get to flowing, my rusty brain wheels start to turn and VIOLA! A fabulous dinner. Now the problem with my 'throw-togethers' is that I struggle to remember WHAT exactly I used, how much, etc...it is especially complicated when I use leftovers to create something new. I have learned over time to write things down as I go but then I have to find this "recipe" I created. I'm terrible at writing things down on scratch paper and then searching frantically for it later. I know...doesn't sound organized but I promise I am. Well, sort of.

I had taken out a package of chicken legs and then wound up eating out. So the next day I KNEW I had to use them but how. I didn't want to 'fry' them or bbq them. Both are delicious but boring, so I looked around and saw the bag of lemons I had recently purchased, ooh and the capers in the fridge. Mmm chicken piccata, but legs do not work well for that but ooh what if...yep that's it. So I grabbed the slow cooker and this is it, simple and delicious...

Lemon Caper Chicken (keto friendly and cooked in a slow cooker/crockpot)
5 chicken legs
2 lemons, cut in half and squeezed
1/2 jar of capers
fresh cracked pepper
parsley flakes
Place the legs in the slow cooker, squeeze the lemon juice  over the legs, sprinkle with capers, pepper and parsley. Cook for 4-6 hours on low and enjoy!

See I promised it would be easy.

Sundried Tomato Pesto Pork Chops #keto

This had to be hands down one of the easiest recipes I've prepared.
Boneless center cut pork chops
rubbed down in sun-dried tomato pesto
saute in olive oil
BAM done!
Delicious, juicy and full of flavor!

Now I served this with a scrumptious creamy cabbage casserole. You HAVE to try that as well.

Cabbage Casserole #keto

Since switching over to a keto way of eating I find it difficult to have nutritious and delicious side dishes. Not really difficult, more work in the way of thinking. My go to used to be sweet peas, rice, potatoes, corn, mac n cheese, ALL carb loaded. Since I no longer eat those, I have to find something to eat besides a salad or green beans.
I was looking at the low carb list of vegetables and saw cabbage. I love cabbage and it is harvested here pretty much from April to October, so there are plentiful and FULL of nutrients. See this post  Looking over my blog post I see I have 36 recipes that feature cabbage. Dang I had no idea. 😲
Cabbage Casserole
4-5 cups chopped cabbage
1 medium onion, I used Viadala
2 cloves garlic, minced
1/4 cup butter
salt and pepper
parsley flakes 1 TBSP
1 1/2 cups heavy cream
3/4 Mexican creme fraiche
1 TBSP ranch dressing POWDER mix
1/2 cup shredded cheese
*Bake at 400 degrees for 20 minutes*
First chop your cabbage, onion and mince the garlic.
I used a large cast iron skillet, melt the butter, toss in the cabbage, onion and garlic, add the salt, pepper and parsley. Stir well and cook until slightly tender, not mushy as it will be baked as well.
Stir in the cream, creme fraiche or sour cream, ranch mix and shredded cheese. Stir well and pour into a nonstick baking pan or spray a casserole dish.
Bake on 400 degrees for 20 minutes. You can also top the casserole with cheese. I sprinkled just a little on top.
Bake and enjoy!
Personally I loved it, D did not. Also the second night I thought it was even better, he still did not. Oh well, they can't all be 10 out of 10 for everyone.

Lemon Butter Chicken #keto

I love chicken, I could eat it almost everyday, and with that being said, I am always on the look out for new ways to prepare it.
So I saw a recipe similar to this on line and then could not find it again. hahaha just my luck but I thought I remember how they did it, so here is my version and oh man...very rich and delicious.
My son had his over rice, but since I do keto, I did not eat rice, just the delicious chicken and some green beans.

Lemon Butter Chicken
2 lbs boneless skinless chicken thighs
3 TBSP butter
salt, pepper, garlic powder, paprika
1/2 - 1 cup spinach
chicken broth 1/2 cup
1/3 heavy cream
juice from one lemon
In a skillet on medium heat put 3 tablespoons of butter. Take your boneless skinless chicken thighs and sprinkle salt, pepper, garlic powder, and Paprika on both sides. Place the chicken thighs in the butter. Cook until golden brown on one side and then flip. Cook until the internal temperature is at least 165. Remove the chicken and add 1/2 cup of chicken broth into the pan. Add 1/3 to 1/2 cup of grated Parmesan cheese. Stir well. Next add 1/2 to 1 cup of raw spinach. Stir well and allow the spinach to wilt. Add in 1/3 cup of heavy cream. Squeeze the juice from one lemon into the pan and stir. Stir well add the chicken and allow to simmer for five minutes.

I was visiting Aunt Olean and my cousin Ann was talking about cleaning..
"As you see, I didn't get the sweeping done yet"
I said "That's okay I came to see you not the house"
Maurice chimes in and says "it's dirt, we all came from dirt so it okay"
Aunt Olean says "that's right, we came from dirt, so I don't do no dusting, cause I don't know if it might be somebody coming or going"
We all fell out laughing!! I love this woman.

I love driving and good thing since my job is driving. I log hundreds sometimes thousands of miles in a week. Rarely does a day go by that I do not see an accident unfold. Sometimes more than one, especially when it rains.

Recently I had to take a lady out of town for therapy, three times in one week, she had requested a female driver as we would be together for 6 hours each day. She said, nothing against men, I love them but didn't think I could talk to a stranger if it was a man for this many hours. I laughed. When we returned to her home she said "thank you so much for making this trip so pleasant. And with the horrible weather too. You're a great driver and I appreciate it so much." Really made my day. It was a horrible weather day, at times I was going 30 mph, wipers on full blast, flashers on and could barely see the front end of the car. We made it there safely and back. whew...my eyes were so tired but it was worth it. Such a lovely lady.

Driving back to the airport, traffic is backed up over 3 miles, when I get close I see why. This trucker obviously does not know how to make a right hand turn. I mean good grief, he had two lanes to turn and what does he do? Runs into the culvert. LOL live and learn man.

Stuffed Mushrooms #keto

You guys know I'm always on the look out for something new. I know, stuffed mushrooms are not "new" but they are for me and these are keto friendly. I tell you these were so much better than anything I've eaten. The only thing that would have made them better was some fresh crab meat added in. Mhm mmm mmm yeah

I made these for lunch. D loves mushrooms and he didn't complain about them being keto at all. You could use these as a side dish, appetizer or like I did...lunch. So good!

You could use portabella's, mini's or button like I did. I found a  beautiful package with medium to large buttons. They were 1-2 1/2 inches in diameter, so good size.

Stuffed Mushrooms
12 medium/large mushrooms
1 clove garlic, minced
6 slices of bacon, cooked crispy and broken up
1 green onion, diced
4 oz cream cheese, room temp
salt , pepper, paprika
Pop the stems off and dice up, slice the onion and mince the garlic. Fry up the bacon, break up the pieces and set aside. Place the stems, garlic and onion in the bacon drippings (with spices)and cook until golden brown. Remove from the heat and cool off. Mix in with the cream cheese. I placed my mushrooms in the pan, drizzled with olive oil and stuffed, this allowed the tops to cook some and become tender but not mushy. Lastly I sprinkled with fresh cracked pepper and a little more green onion.
SOOOO good!

Deep Dish Cheese Crust Pizza #Keto

Deep dish casserole pizza
4 oz cream cheese (I used 2 oz of regular cream cheese and 2 oz of vegetable spread cream cheese)
4 eggs
1/4 cup Parmesan cheese, grated
3-4 TBSP sun dried tomato pesto
1 cup shredded cheese, your preference

Taking the 4 ounces of cream cheese and four eggs blend until smooth. Mix in 1 TBSP Italian seasoning and 1 tsp of garlic powder)
Take a 13 x 9 pan and sprinkle Parmesan cheese on the bottom.
Pour the egg and cream cheese mixture on top. Bake for 20 to 30 minutes at 350°. Take it out of the oven and spread 3 to 4 tablespoons of pizza sauce or I used sun-dried tomato pesto.
Sprinkle on the meat mixture. I used a half a pound of ground beef, eight slices of Applewood smoked bacon chopped ,one green bell pepper ,three green onions and  sautéed. Once the meat is put on top of the pesto ,sprinkle with more Parmesan cheese and mozzarella or provolone or whatever you like. I used double cheddar because it's what I had. 
Bake at 3:50 for another 10 minutes or until the cheese is good and melted. Allow to rest for a few moments cut into eight slices serve eat enjoy!

keto style cheeseburger casserole

 Looking for a filling, quick and easy recipe? Give this a try, even if you are not into low carb/high protein/high fat or keto, this is a delicious dish. I enjoyed this with a small salad.

Cheeseburger Casserole - keto style
1 1/2 lbs of ground beef
1 tsp fresh ground pepper
1 tsp paprika
1 TBSP parsley flakes
1 tsp garlic
1 tsp onion powder (optional as I was out and didn't use any)
Cook the above list of ingredients in a skillet then set aside.

In a bowl, beat together:
4 eggs
2 oz cream cheese
1 can tomato paste
1 1/2 cups shredded cheddar cheese

In a 13x9 baking dish, spray with a nonstick spray, sprinkle the bottom with Parmesan cheese, place the meat in next. Pour the egg and cheese mixture over the meat. Lastly
Sprinkle:
1/2 cup shredded cheddar cheese
on top and
bake at 350 degrees for 35 minutes

Keto Bread (first attempt)

Well, I made my first loaf of keto bread today...8/12/17
It is short and dense, a little dry and gritty.
Other than that, it is delicious. The consistency is that of baked cornbread. Not light and fluffy but how can it be, it is almond and coconut flour. Still it is tasty enough for toasting, smearing with butter or cream cheese. Definitely not worthy of a sandwich but it is my first attempt. I might play around with the recipe or not. I really do not miss bread enough to go at this more than one or two tries to be honest.

1 stick of butter melted
3 TBSP of coconut oil, melted
1 tsp baking powder
1/2 tsp salt
1/3 coconut flour
2/3 almond flour
6 eggs
Mix all the ingredients together and spoon into a greased loaf pan. Bake at 350 degrees for 40 minutes. Slide it out of the pan, allow to cool, slice and enjoy. It is really good toasted with cream cheese!

Work stories...
In July I was driving a gentleman to another airport, this is common. It takes several hours but it allows me to bond with my passenger(s). It is almost always a blessing. This particular day I was telling him about some of my interesting passengers or experiences at the airport. 
He said "well let me tell you, my job isn't as exciting but I do get some great excuses for missing work from my salesmen". We both laughed, I used to work on a car lot years ago and salesmen are ALWAYS trying to con you about something. So he goes on..."This young kid was working for me and left for lunch one day with his girlfriend. All the salesmen loved when she came in, a real looker. So he leaves at noon, one o'clock rolls around he's not back, two still not back, three nothing, four and he strolls in. The manager calls him to his office. Okay son, what's up. You left here FOUR hours ago for lunch. The young man replies, yes sir, I was tied up. No son not for four hours tell me the truth. Yes sir I did, I was tied up with my girlfriend. Son I'll give you one more chance. No sir you don't understand, I was TIED UP BY my girlfriend.
The manager looks at the assistant manager and says "well I've seen his girlfriend so I'm gonna let it go". ROTL WOW really?!

Driving out of town to pick up a client and I pass a gas station. There is a man standing in the middle of the parking lot blowing his nose. Okay that would be okay except he has no tissue, he is going at it! Hand to the side of  his nose just blowing into the air, snot flowing. GROSS what is wrong with people?!

I picked up a lady and then drive her to pick up her preteen from camp. Several hours later we are on our way to our final destination and she is asking him all sorts of questions.
What did you eat from breakfast? Lunch? Dinner?
What did you learn to eat that you didn't like before? Green beans, to which she was thrilled.
What new foods did you try that you now like? "OOH these biscuits from BoJangles with blueberries in them!"
She said "WHAT? A biscuit with blueberries? Dawn do you know what he's talking about?"
"Yes ma'am I do. They are called BoBerry Biscuits and they are delicious!"
"oh, well is there anyway we could stop and get one?" Her son quickly says "THREE"
She laughs and says "you can't eat three" he says "oh yes I can"
I laugh and tell her yes, there is a BoJo right down the road.
On the way in, she stopped and said, "what should I expect?"
I laughed, " well, they are buttermilk biscuits with blueberries in them along with sugar, baked and drizzled with a delicious glaze. Be careful, they are addicting."
She goes in and makes her purchases. Her son is devouring these boberries and she said "okay let me try a bite" She takes one bite and says "OH MY GOSH DAWN these are FABulous! and in a few minutes she says "OH NO I just ate a whole one!!"
This cracks me up! We're talking a tall, tan, gorgeous blonde from NY who eats VERY healthy and she just devoured a boberry biscuit! (you can find my quick easy version here) I said now aren't you glad there's no BOJO in NY? She said YES I'd be fat!
Girl friend would have to eat a LOT of biscuits to be fat!!

I had a WONDERFUL weekend recently, I visited Minette and Mike. Minette is Southern Belle Charm! We had the best time. And that precious dumpling in the bottom corner is Duke, my new buddy. NO the LEFT bottom corner silly, the right corner is me!!
My DIL - Daughter-in-law (one of them) is a radio production manager and DJ. The perks, free concerts and other events. She had the joy of attending SuperCon a few hours from us recently and she took my granddaughter. LMSP...oh you can only imagine! Yep she was the hit, the bell of the ball, the queen of the day. The only kid there AND dressed up! Several characters wanted their picture taken with her, to include...TOMMY the original Green Ranger then turned White Ranger from the original series Power Rangers!!
Isn't that the coolest thing ever? If you think not, just nod and smile, it's okay.

Working so many hours, when I am home on weekends my poor kitty wants to do nothing but lay me. serious I kid you not.

So Jesse and I are having this discussion about life, relationships,and hard lessons we have both learned over the past few years. He says to me "well mom, I've learned a lot and back when I was in my 20's..."
I said "wait a minute, Jesse you ARE in your 20's!"
We both start laughing and he says "okay, back in my early 20's"
I said "Jesse, you're only 25!"
He says "MOM...okay fine, when I was 18-20 is that better?!"
ROTFL poor boy has been through so much he has an old soul now.

So much more has happened to include finding a condom in the back seat of one of our cars at work, being hit on by every man under 90 this past week, seeing a dog take a dump in the middle of the airport, watching a fight break out at the rental counter, and much more. My life is definitely not boring.

Cabbage Rolls In A Bowl #Keto Style

I have gone through some of my old recipes and am currently revamping some for my new WOE (way of eating) #keto. It is very simple and I'm surprised at how many of my recipes I can do this with, with great ease and pleased too I might add.
One recent one being cabbage rolls or "undone" or "unstuffed"  or cabbage rolls in a bowl. HA! A rhyme! 
Here are the original recipes if you are not into keto.

Super simple and so delicious.
Cabbage Rolls In A Bowl #Keto style
1 lb ground beef (I used 73/27)
1 lb ground pork (I used 80/20)
2 tsp each of garlic powder, onion powder, paprika, fresh cracked pepper, salt
1 TBSP parsley flakes
1 can original Rotel
2-3 cups chopped green cabbage
2 cups cauliflower florets, riced/chopped finely (I used frozen, see notes below)

In a large skillet brown your two meats with the veggies. I did not drain any fat but allowed it to soak into the cabbage and cook. While you are doing this, soak the frozen cauliflower in warm water and drain well. Then chop finely, you will see it in the collage photo.

Once the meat is done, add the cabbage and allow it to cook down ( about 10 minutes), next add the tomatoes and stir well. 
Lastly add the cauliflower rice and stir well.
Allow this to all marry in flavor and simmer about 10 minutes or so.
Serve in a bowl and enjoy! No side dish needed as you have cabbage, cauliflower and tomatoes all in the dish. It's a simple one pot meal, quick clean up and delicious to boot!
