Chocolate Flourless Gluten Free Mug Cake AND #UYW

Several years ago my ex and I planted a garden, well actually we planted one every year for four years. Due to his background in construction he spent hours building pens or raised beds for our plants, flowers, hybrid pepper plants and bushes. It was not cheap but saved a ton of time and effort where weeding was concerned.
I really miss my garden and fresh veggies. Currently I do not even have access to a farmers market so I'm stuck getting veggies at the grocery store. Thankfully our local Piggly Wiggly does carry some local produce. There are several nurserys that have flowers, hybrid plants, cheap or fairly inexpensive construction material for beds, pens, fences and other outdoor needs.

Chocolate Flourless Gluten Free Mug Cake
1-2 oz of dark chocolate (I used 3 mini special dark chocolate Hershey bars)
1 TBSP milk
2 tsp cocoa powder
1 egg yoke
1-2 tsp powdered sugar, optional
I used my Pampered Chef ceramic egg cooker , it took a total of 1 minute and 15 seconds to make this decadent moist fudgy little cake.
Place the milk and chocolate in a cup/cooker for 30 seconds uncovered
stir well
Add the cocoa powder and egg yoke. stir well again.
Microwave for 30 seconds, if wet in the center cook again for 5 seconds, check and do this until set. Invert on a plate and sprinkle with powdered sugar.

Swiss Chocolate Cake with Coffee Vanilla Almond Frosting AND June Poetry - Fatherhood

Hey y'all, how's it going? June is flying by at record speed. Our busy season at work has hit and I work so many hours I'm meeting myself coming and going! Does that ever happen to you?
When I'm stressed, worried or exhausted for some reason, I want cake. I guess it is comfort food and in my mind it makes me feel better. This one did!
It is a no brainer really. I just added a few ingredients to some store bought items and BAM! Cake 😍
I decided to share this one today because of our poetry theme...Fatherhood. As some of you know my Daddy passed away 4 years ago on the 2nd of this month. Father's Day is coming up and of course my mind goes to him, as it does most days to be honest. Yes, I was, am and always be a Daddy's girl.
One of his favorite things was ... chocolate! He loved chocolate in any form he could get it. Now he wasn't a fan of coffee until his later years but he loved cake and I'm pretty sure he would have liked this one. Even if he didn't he would have eaten it and told me it was wonderful. Why? Because my Daddy loved me, no doubt in my mind and he would have eaten mud if I offered it.


So in honor of Fatherhood, we have a group of bloggers offering up poetry, check out the links at the end of the post and I have this cake. The poem might not be the best, but hey, I never claimed to the be next poet laureate. 

Duncan Hines Swiss chocolate cake mix
prepare according to package, mine is made in a 13 x 9
Allow to cool.
1 can of store brand creamy white frosting
2 TBSP powder fine coffee, your choice of brand
Mix the coffee in the frosting. Cover the cake and top with sliced almonds.
whipped topping, optional
chocolate syrup, optional
See, super simple! But man was it good!!

My Boys Are Dads
My boys are Dads
How did this happen?
Just yesterday they were little boys
running around playing games
throwing mud and skipping stones.
Today they are grown
with families of their own.
Somehow my boys became Dads.
They went from legos and Zelda
to dates and cars.
From paint ball fights
to late college nights
to working two jobs.
Finding a girl
to making her his wife.
Getting married
moving away
having babies
and making mom sad.
We all grow up
we all move away
we all grow old
we all can't stay.
I'm not sure how it happened
BUT
My Boys Became Dads!
They are mature men
with wives and responsibilities.
Little ones who look to them for guidance.
Reading bedtime stories
instead of being read to.
Tying shoes and wiping noses
instead of having skinned up knees themselves.
Making a budget and paying bills
instead of asking for allowance.
Somehow when I wasn't looking,
My Boys Became Dads.
So if your kids are small
hold them now
before they are too tall.
They will look down on you and smile
and say
look mom...
now I"m a Dad.

Frozen Mocha Coffee -School's Out #Blogwithfriends

HEY everybody! School is out and I am so thankful I do not have to worry about daycare, camp, and finding things for the boys to do so as not to hear "MOM I'm bored!" However, I do miss them being home and I'm not sure that will ever go away.
I was reading on Facebook where some folks are already "counting down until school resumes", wow, that's what I have to say about that. WOW...I never felt that way, good thing too considering I homeschooled my boys! LOL We took summer break like everyone else. I needed to search for curriculum, extra curricular classes, sports, search for upcoming field trips, buy supplies and recharge my mom/teacher/administrator batteries so I didn't go postal on some poor unsuspecting soul at Wal-Mart.
Back in the day when my kids were in school and I was pulling my hair out  loving every minute of teaching, I could have used this drink many a time! I did not drink coffee back then, actually, it is a new thing for me. Yes, actually about a month now. Okay, so I did drink International Coffee, you know the ones in the little tins, I used to love that stuff, but it's not real coffee. Okay, so I don't actually drink real coffee now. I drink frozen coffee! OMGosh where have you been all my life???

Sorry, I was lost for a moment of drool!
I do believe it could be considered dessert and not a drink but whatever you call it, I call it addicting.
Each morning I hit my local DD drive thru and grab a medium Coolatta with a shot of mocha and whipped cream. MMM mmm good gracious I do love it. So I created my own, super easy to do recipe.
Side note** So it seems I have become addicted to Dunkin' Donuts frozen coffee. I've had one almost every day for a month. And I say that to say this, I come home one evening I have not eaten all day. I'm very hungry. I'm also very antsy and short with biting comments.  My son says what's wrong with you? I said I guess I'm just too HANGry . You know like the snickers commercial where you're just not yourself when you're hungry! But I cannot eat snickers because I'm allergic to peanuts. As we talk I'm still kind of sleepy. I laughed and said I have not had my Dunkin' Donuts today. He says will get in the car woman because I can't deal with you when you're "danky ". So the  moral of the story is without food I'll become angry and without my frozen coffee I'll become Danky!
For those of you whose kids are home, already driving you bezerk and you need a drink, but it's not 5 AND you have to drive them to swim team, baseball, camp, whatever, you can still drink this and drive.

Updated Chicken Salad - secret ingredient AND SSS

This chicken salad is a major cheat but tasty and super easy. With all the hours I have to work these days I am constantly looking for a quicker easier way for a delicious meal. Well, here it is.
1 can chicken, drained OR two chicken breast boiled, no skin and deboned/shredded
1 TBSP mayo
1 TBSP sweet pickle relish
salt and pepper to taste
1/2 tsp sugar
1/4 cup julienne radish
1 short stick celery minced
1 Pink lady apple, cored and diced
stir all together and serve on crackers, on toast as a sandwich, on a bed of lettuce or it is delicious all by itself.

Other than that, you can literally pick anyone, from anywhere, of any age... Why did you pick that person? What is the one thing you would absolutely do during your week as them?

PS was my dream as a teenager. Wow can you imagine jet setting around the world , seeing the sites, sleeping next to that gorgeous man!?!? Yeah I'd take her place in a skinny minute. Plus she's a tall thin gorgeous blonde, three things I'll never be. I'm sure she would say there are drawbacks but I can't imagine what. Well maybe crazed fans. Always on the go. No private life. Okay so she doesn't have the perfect life but she gets to sleep with Paul Stanley so it's pretty dang close. 
On a serious note... I'd consider switching with Lori Greiner. She's a multi-millionaire, self made and one of the sharks on Shark Tank. 
Instead of investing in more products that we really don't need; I'd invest in lives. In people. In making a difference. Creating jobs, helping people in my own back yard. Food, clothing, shelter and classes on resume writing, how to interview for a job, classes on skills to obtain a better job, things of that nature. 
Don't get me wrong. I don't think she's a bad person and she has a big heart. I'd just personally use the money, name and status for a bigger cause. It sounds simple but I'm sure there would be a lot of red tape and tons of logistics to my plan but it would be worth the effort.

Frozen Lime Beach Comber

Have you ever had one of those days? You know the ones that you wished would hurry and be over? Maybe it was one of those weeks? Months? A year? yeah, me too!
I really felt on the brink of a breakdown. Anxiety was high, which is a new sensation for me and one I am NOT enjoying, depression was creeping in, worry over money and bills or lack of money but an abundance of bills, long hours, very little sleep, stress from my ex. Let's just conclude with...I needed a drink! But I hate bars. And I didn't want to go out. I just wanted to vegetate at home. So I turned to my mixologist...Karen and asked her about cocktails. She gave me a few suggestions and I came up with this beauty!
Yes, he's a beauty too. That's my middle son Jesse, he enjoyed a cool refreshing adult beverage with his old mom on the back deck.
This drink is very simple, the difficult part comes in waiting about 45 minutes while it sits in the freezer. Trust me, it's worth the wait.
Now look at these ingredients, you know the above song popped in your head, admit it. It was playing like a broken record the whole time I was mixing up the ingredients. My son just shook his head and said "yeah you seriously need a drink". He thinks my coconut is cracked. LOL
I felt much better after two of these. Relaxed, cool and stress free, at least for that night.
Give it a try, I'm sure you'll enjoy it.

Frozen Lime Beach Comber
20 oz can pineapple tidbits with juice
1/3 c powdered sugar (because it dissolves on contact instead of having to use white sugar and cook it down with water to create a simple syrup)
32 oz container lime sherbet 
6 oz Malibu coconut rum
Blend. Freeze. Enjoy
This makes 4 drinks! Two for each of us! YES 😍

Now that it's Friday, I think it's time to "put the lime in the coconut and drink'em all up"!! Cheers

Blackened Mahi Club

Several months back I ate at the Ruddy Duck with some friends and had a fish sandwich. Not just any fish and not just any sandwich. Oh my! A nice thick slice of blackened Mahi and here today I'm sharing my version.

Blackened Mahi Club
a slice of Mahi-blackened (blackened seasoning: 1/2 tsp chili powder, 1 tsp each of oregano, parsley, garlic powder, paprika, white pepper, black pepper)
lettuce
tomato
bacon
bun
sriracha mayo

This is a delicious filling yet not heavy meal. Great for lunch or supper.

My friend Diana introduced me to the Mahi club at The Ruddy Duck in Morehead City. Their's has a slice of cheese melted over the fish and served with honey mustard, a side of pickled veggies and chips. My version cost $3 per sandwich not bad on the budget!

If you've never had Mahi and are not very fond of fish, this is a great type to try. It is not fishy and is meaty. Some say "taste like chicken" but come on, everything can't taste like chicken! Fresh Mahi does cook up more like a 'meat' than fish when you are looking at the flesh/meat. Mahi is also known as dolphin but not a porpoise. Mahi Mahi is a big fish with a flat head, not an attractive fish but tasty.
Isn't he a beauty? LOL a face only a mother could love. Now the flat faced are the males and the pointed faced are the females. And there is your marine biology for today.

Southwest Chicken Chili Frito Nacho Salad and Funny Friday

I'm a big salad lover but I like my salads to have substance, protein and lots of flavor. The meat and bean mixture you could use in tortillas, over corn bread, in a bread bowl or by itself with crackers. Really the possibilities are pretty numerous. I ate my salad two different ways, as you'll see below and both were delicious. My son enjoyed it as well.
This is also a Funny Friday post, that you will find after the recipe.
With a super busy schedule and the weather heating up so quickly around here, this recipe is perfect. It cooks while I'm at work, I come home and assemble, eat and enjoy the leftovers for several days. No, I did not get tired of eating it. I was sorry to eat the last bit.
Southwest Chicken Chili Frito Nacho Salad
8 boneless skinless chicken breast tenders
One can of fire roasted diced tomatoes
One can kidney beans rinsed and drained
3 tablespoons of homemade taco seasoning
Slow cooker for 6 to 8 hours on low
Shredded chicken and stir well
Place Fritos on a plate, top with lettuce and chicken mixture then add cheese and dressing. Or salsa guacamole sour cream.

Full Loaded Brownie Bake and FOTW

Look at this deliciousness!!
Fly On The Wall...what happens when you guys aren't around. On the job, around the house and in town. ENJOY
I'm driving a family to the grocery store and we stop at the gas station. The kids stay in the car with me. YAY...not. Anyway, the oldest, a girl says "I see TAKIS!I'm gonna get my momma to get me a bag of Taki Taki! I got money." Her little brother says "you ain't getting no Taki Taki"
She looks at him and says, with lots of attitude! "YOU ain't my MOMMA, you ain't even a girl!"
I was busting out laughing. They look at me like I'M the one who's crazy! OMGosh these kids!!
Their parents come back out and I start telling the dad about the earlier exchange. The little girls says "OH NO wait wait, this is my story let me tell it!"
Again, I'm busting up.
The little boy breaks in and says "She said I ain't no girl, I'm a boy"
She says "NO you ain't no girl, you ain't got no long hair!"
I'm busting up and said "WAIT your daddy has long hair" he had dreads down his back.
She says "NO HE HAIN'T, that ain't his hair!"
OMGosh!! hysterical
We have a security guard at work, he works nights and well, OMGosh to say he is gorgeous and built like a brick wall is an understatement! IF I work late I see him, he always comes over and gives me a big old hug. 
Ann one of our drivers said "WHY doesn't he do that to me?! MY GOD that man is gorgeous!" "And he smells so damn good!"
I said "yes he is one FINE looking man, smells great and is married" ALSO "because he can smell your cougarness a mile away and it scares him. Besides he knows I'm harmless! YOU might not let him go. AND by the way, he's married!"
She says with attitude "well damn of course he is! ugh"
Fully Loaded Brownie Bake
Betty Crocker salted caramel brownie mix
2 eggs
1/3 cup oil
3 TBSP water
Jett puff marshmallow cream
Hershey's caramel syrup
mega stuffed Golden Oreo cookies
1 cup M&M semi sweet baking chips
Friendly's vanilla bean ice cream
extra creamy cool whip
Hand mix the first four ingredients in a bowl. Pour 1/3 into a greased 13 x 9 pan.
Drizzle caramel syrup over batter
drop teaspoons of fluff/marshmallow cream over batter
crush Oreos and sprinkle over batter
Pour remaining batter and gently spread
sprinkle M&M chips
sprinkle with more chopped Oreo's
top with the salted caramel from the brownie mix
Bake at 350 degrees for 30-40 minutes
Allow to cool and top with Vanilla Bean ice cream and or extra creamy Cool Whip and a drizzle of caramel syrup.

When you go for that last bite of cereal and see...an ant floating in your milk?!? My first thought was damn I have to toss it. Then I thought wait a dang minute!!! How many did I eat??? Omgosh
So I had a first...a guy jumped out of my car, work car, and ran off without paying! Did he get away? Hell no, I chased that sucker down, found a sheriff and he paid his fare, then I left him standing in the parking lot. Sorry piece of crap. Ticked me off! That's the short version!

Loaded Green Veggie Beef Stir Fry and use your words

Hey howdy hey! I'm so excited to share this recipe with you! This is by far the BEST, no kidding, the BEST stir fry I ever prepared. OMGosh, I'm telling you my son and I gobbled it up like it was our last meal and we were walking the green mile!
2 small chuck steaks, fat trimmed and sliced
1 tsp paprika
1 tsp chili powder
1 TBSP parsley
1 tsp ginger powder
1 tsp garlic powder
1 tsp black pepper
1 TBSP flour
2 TBSP soy sauce
1 TBSP butter
2-3 TBSP oil
2 TBSP brown sugar
Put the oil and butter in a non stick skillet or wok if you have it. Slice the meat and toss into the hot pan. Sprinkle all the spices, flour and brown sugar over the meat. stir well. Once the meat begins to brown pour on the soy sauce.
Stir and cook to medium. Now add:
broccoli slaw
sweet bells sliced
pea pods, I used a generous handful, maybe 3/4 cup
10 brussel sprouts sliced
3 green onions, diced
broccoli, about a cup or florets
asparagus, baby size and a small bundle
Stir until you have the desired crispness of the veggies or wilted to your preference.
While this is going on, boil water and toss in your
chow mein noodles
These should only take 2-3 minutes. Stir these in and a couple of tablespoons of the water. Serve and eat immediately.

The morning started with my having an enormous headache. I was trusting my doctor that the new medication would be helpful but this particular morning I was thinking "he must be joking, this stuff is not working". I felt like I had been run over by a mob of angry vikings! 
I walked into the kitchen and there sat my beautiful boy, Sam, my tuxedo kitty. He jumped on top of the freezer and eagerly awaited his morning bowl of kitty nibbles.
Walking over I gave him a generous rub down and reached for the food container.
MEOW
I know, don't you see I'm getting it.
MEOW
Give me a minute impatient butt.
MEOOOOW
What? so I walk over and see his water dish is almost empty.
Okay okay let me fill it up. There, happy now?
Sam rubbed against me purring away.
I stroked his face and he closed his eyes, lifted his face towards me as his kitty motor went into high gear. I smiled, his unconditional love and massive purring always made me feel better. I thought to myself, how could anyone NOT love a kitty?
Pouring his food I saw my medication on the counter. I walked over and picked it up. Looking for the phone I dialed the number for the pharmacy to ask a few questions. They might seem silly but there could be something I missed, like take with food, take only at bed time or something of this nature.

Either way, I was asking...as soon as I managed to get through the automated system to a real person. Ugh I could feel the enormous headache morphing into gargantuan.
